You should definitely use a Shield/1H Monk. A Monk was designed to go into battle fast, do major damage, and then get the hell out of the way. With a shield a Monk is better protected so that if you aren't able to get him out of there quick he won't be so easily slain. Plus, when facing the big bosses your Monk may not even get the chance to put a hit out there unless you have a shield for protection. Another advantage to having a shield is it's a lot easier to find 1 great weapon than 2 for a dual wield Monk.
